Wash 1 lb of black beans and let them soak over night. The ”sofrito” (fried sauce) requires: olive oil, 1 roasted paprika, peel off the skin, 2 onions, various crushed cloves of garlic,vinegar,1 tablespoon of ground oregano, 1 bay-leaf.

Fry the chopped paprika, onions and crushed garlic cloves in olive oil in a large pot over a low flame during 15 minutes. After about 7 1/2 minutes add a splash of vinegar, ground oregano and the bay-leaf. Then add the black beans with the soaking water. Cook for about two hours over a low flame. About 15 minutes before taking it off the flame crush some of the beans and add some more olive oil into the pot to thicken the sauce. Serve first the white rice on one half of the plate, then the black beans on the other half.


Pour 1 oz. of coconut cream, 1 oz. of cream, 1 oz. of white or brown (aged) rum in a shaker with ice cubes and shake well. Filter and serve in a cocktail glass. Sprinkle with cinnamon.
